  Chicken Cacciatore
Chicken Cacciatore is a nice chunky Italian dish you can serve on short notice. I like to throw extra vegetables into the sauce - but I do that with everything. I have not tried making this with pork, so be weary.


Ingredients:
cut up chicken ( I prefer dark meat such as legs and thighs)
flour (about 1/2 cup to coat the above amount of chicken)
fry oil (such as Crisco or lard)
1/4 cup olive oil
1 onion, chopped
sliced green bell pepper (about 1-2 small bell peppers)
2-3 cloves diced garlic
1 can or about 4-5 whole tomatoes-cut tomatoes
1 can tomato sauce ( about 8-16 ounces, depending on how much you want)
6 sliced mushrooms
Oregano
Basil

coat chicken pieces with flour and fry chicken until it is lightly browned. It should be cooked about 1/3 of the way. Remove the chicken from the pan, and using the drippings, saute the onion, green peppers, and garlic. Add tomatoes, spices, tomato sauce, mushrooms. Cook for 5 minutes, stirring, then add chicken to the top of the mix. Cover and reduce heat to low, then and simmer for 30-40 minutes, or until chicken is done. Serve over noodles, just like spaghetti.
