  Pancakes

This pancake recipe is a little wrong. I've changed the original to include a bit more flour, a bit more baking powder, and a bit less milk. You may need to change it depending on your altitude. At sea level, the batter comes out a hair too watery, however, at mountain height, they come out perfect. This recipe also works well for waffles.


Pancakes

2 1/3 cups flour
4 1/2 tsp baking powder
1 tsp salt
2 tbs sugar
2 eggs
1 1/2 cup milk
1/3 cup oil
dash of vanilla

Sift dry ingredients together. Mix in wet ingredients. Don’t over mix the batter. You want some flour chunkies. Add any number of "extras" including chocolate chips, cinnamon, fruits, and other assorted spices. Drop batter in slightly less than 1/3 cup increments onto buttered hot frying pan or skillet. Cook on low to medium heat until craters appear in the pancake's surface. Flip once and serve warm with syrup or jam.
